How do I adjust stitch counts for a different gauge?

Multiply the pattern stitch count by the ratio of your gauge to the pattern gauge. For example, if the pattern calls for 100 stitches at 22 sts/10cm and your yarn knits at 18 sts/10cm, you need 100 x 18/22 = 82 stitches to achieve the same width.

Will the fabric look the same with a different yarn weight?

No. A heavier yarn creates a thicker, less drapey fabric. A lighter yarn creates a thinner, more fluid fabric. The stitch definition and texture will also differ. Cable patterns look better in smoother, heavier yarns. Lace opens up more in finer yarns.
